The Whaler’s Inn, an established and growing boutique hotel in the center of Mystic, CT, is seeking an experienced and motivated executive chef to launch and grow a new full-service restaurant and food and beverage operation on-premises. Mystic has garnered regional and national attention as a popular food destination to compliment the area’s other attractions and the right candidate will join an existing leadership team in our mission to further cement the hotel as the premiere option for hospitality in the area.
- Leadership skills, with building, managing, coaching and motivating a team.
- Strong recipe and menu development knowledge, with administrative skills including costing, inventory, scheduling, and labor.
- Dedication to quality control and recipe replication.
- Passion for sourcing local food and beverage options
- At least 5 years prior culinary experience with prior experience working as a Chef or Sous Chef.
- A culinary degree and ACF certification is strongly preferred.
About the Hotel
The Hotel is a local landmark and the most prominently located boutique hotel in the area and attracts over 10,000 guests annually. The Hotel boasts 48 rooms and since taking over the Hotel three years ago, the owners have consistently and aggressively reinvested in room and lobby renovations and focused on marketing efforts. In conjunction with the launch of this new restaurant, the ownership is commencing a second phase of renovations and have a stated goal of fully transforming the Hotel into a nationally recognized and profitable boutique hotel that is authentic to Mystic. The restaurant will be a generational opportunity to create a brand in a vibrant setting and work with an experienced and motivated hotel operations team to create and promote an exceptional experience for guests and locals.
The proposed restaurant space will consist of 1,300 square feet with zoned seating for 60+ and additional prep space and conference space that will also service wedding parties, private dining and other private events booked by hotel management staff. The previous restaurant was successfully operated by a third-party for over 30 years and this presents the unique opportunity to integrate into an already successful hotel operation. Initial designs have been advanced but we are looking for input from a Chef early in the process to help design, program and market the space and the menu. Breakfast, lunch and dinner service is a must. Creative ideas and solutions are expected. Permits have been received and we would seek to open by Memorial Day.
